Potato Salad with Pancetta, Rosemary, and Lemon

I really really love potatoes. I like to think that loving potatoes is very Irish of me.. it makes my hair feel redder. Anyway, I made this potato salad last summer, but just found the photos on my camera. It is very delicious and fancy ;)

I only had one minor incident.. turns out pancetta cooks FAST! I am pretty sure i entertained all of my neighbors when i flung my doors open to let the entire apartment clear out and so that my smoke alarm would STOP BEEPING, as well as the neighbors behind me.. when i threw a pan of smoking bacon onto the fire escape.
